We produce 400 kg waste per person per year and 2/3 of that is organic waste like kitchen scraps and garden clippings. If this ends up in landfill it produces methane, a powerful greenhouse gas that contributes to climate pollution. Not to mention wasted energy, transport and money associated with putting food onto your table in the first place.
